Does smart pls calculate correlations between two individual variables automatically and if yes, where can I find these correlations?

Yes, SmartPLS 3 provides the correlation matrix of all observed variables when you click on your data file. The data view provides several descriptive statistics for each variable and, on a separated window tab, a complete correlation matrix.

I am using Reflective-Reflective HCMs in my model and reading the Advance Issues book (Hair et al, 2018)I found out that I needed to calculate the AVE, composite reability and Cronbach's for them using the loadings and formulas. However, for the crombach's the book refers to de average correlations of the LOCs. Where can I find?? or How can I calculate it??

You can find the correlation of the LOCs in the PLS results. There are results for "Latent Variables" where you can find the latent variables scores and their correlations.
