can I use PLS only for metrical data?
I have a questionnaire with 5 different answer possibilities ("I totally agree" - "I totally disagree") ? Can I use PLS for the analysis?

Yes PLS can be used only with metric data, just like regression. Nominal variables should be coded into dummy variables
